Description
湘菜，又叫湖南菜，是中國歷史悠久的漢族八大菜系之一 ，早在漢朝就已經形成菜系。以湘江流域、洞庭湖區和湘西山區三種地方風味為主。
湘菜製作精細，用料上比較廣泛，口味多變，品種繁多；色澤上油重色濃，講求實惠；品味上註重香辣、香鮮、軟嫩；製法上以煨、燉、臘、蒸、炒諸法見稱。
代表菜有：辣椒炒肉、剁椒魚頭、湘西外婆菜、吉首酸肉、牛肉粉，衡陽魚粉，棲鳳渡魚粉，東安雞，金魚戲蓮、永州血鴨、九嶷山兔、寧遠釀豆腐、臘味合蒸、姊妹團子 、寧鄉口味蛇、嶽陽姜辣蛇等
